Ingredients

3 lb (1.5 kg) Canadian Pork Rib Roast

2 tbsp (25 ml) chopped fresh rosemary

1 tbsp (15 ml) chopped garlic

1 tbsp (15 ml) brown sugar

1 tbsp (15 ml) sesame seeds

1 tsp (5 ml) coarse black pepper

 

Directions

Combine all ingredients (except the pork) and rub this mixture all over the pork.

Place pork in a roasting tray and roast at 325ºF (160ºC) until a meat thermometer registers 155-160ºF (68-71ºC), about 1 1/4 to 1 1/2 hours.

Remove from oven; cover loosely and let rest for 10 to 15 minutes.

A boneless roast will take approximately one hour. A bone-in roast will take about 30 minutes longer to cook to temperature.
